During the day, light suppresses melatonin production, while in the evening, melatonin production increases (from the pineal gland in the brain). Our bodies produce a large portion of melatonin itself; the contribution from food is minimal. The sleep hormone can also be produced from tryptophan. The body converts tryptophan into 5-HTP, which in turn is converted into serotonin. Serotonin can then be converted into melatonin. This conversion process requires various cofactors, such as magnesium, B vitamins, zinc, calcium, and amino acids. Foods rich in tryptophan generally also contain these supporting substances.
